Veg Crispy Pillows
The name of this recipe clearly tells what this recipe is all about. These are the crispy snacks that look like pillows and are stuffed with lots of vegetables.

Usually we have to knead the dough for the puffs that we make for veg puffs which seems out to be a lengthy task. Here in this recipe you don’t have to knead any flour just use bread slices as a substitute.

These snacks are suitable for every type of party. You can pair these snacks with any type of sauce.

INGREDIENTS FOR MAKING VEGETABLE STUFFING:-

  • Oil (2 tbsp)
  • Cumin seeds (1/2 tbsp)
  • Onions (3/4 cup)
  • Garlic (3 cloves)
  • Green chilli (1 large sized)
  • Ginger (1 inch)
  • Tomatoes (1/2 cup)
  • Salt (as per taste)
  • Red chilli powder (1/2 tbsp)
  • Oregano (1/2 tbsp)
  • French beans (1/2 cup)
  • Capsicum (1/4 cup)
  • Cabbage (1 cup)
  • Cottage cheese (1/2 cup)
  • Curd (2 tbsp)

INGREDIENTS FOR MAKING VEG CRISPY PILLOWS:-

  • White Bread (8 slices)
  • All-purpose flour (4 tbsp)
  • Water (as needed)
  • Salt (as per taste)
  • Black pepper (1/4 tbsp)
  • Bread crumbs (1 cup)
  • Oregano (1/2 tbsp)
  • Oil for frying

METHOD FOR MAKING VEGETABLE STUFFING:-

  • In a pan heat 2 tbsp oil,
  • Add 1/2 tbsp cumin seeds and let them crackle,
  • Add 3/4 cup chopped onions, 3 cloves of chopped garlic, 1 inch chopped ginger, 1 large-sized chopped green chilli and fry them till the onions turned golden brown,
  • Once the onions turned golden brown add 1/2 cup chopped tomatoes, salt as per your taste, 1/2 tbsp red chilli powder, 1/2 tbsp oregano and cook them till the tomatoes become soft,
  • Once the tomatoes are soft add all the vegetables 1/2 cup french beans, 1/4 cup capsicum, 1 cup cabbage and cook them on low flame for 5-7 minutes,
  • When the vegetables turn soft switch off the flame and add 1/2 cup cottage cheese, 2 tbsp curd and mix well,
  • Vegetable stuffing is ready, keep it aside.

METHOD FOR MAKING VEG CRISPY PILLOWS:-

  • Take some white bread slices,
  • Cut the corners of bread slices and roll them thin,
  • Apply a thick flour paste on all the sides of the bread slice to stick it well,
  • Place the prepared stuffing in the center,
  • Fold the slice and stick the corners well,
  • Take 3 tbsp all-purpose flour, add salt to taste, 1/4 tbsp black pepper and make a smooth batter by adding 1/2 cup of water,
  • Take 1 cup of bread crumbs, add 1/2 tbsp oregano and mix well,
  • Dip the prepared bread pillow in the flour paste,
  • And then coat with bread crumbs,
  • Deep fry on medium-low flame till they turn golden brown,
  • Take them out on a paper towel,
  • And the Crispy veg pillows are ready to be served.

NOTES:-

  • Adding curd will give it a creamy texture, you can also add white sauce and tomato ketchup instead.
  • Instead of using bread you can knead the dough using all-purpose flour and make pillows using it.
  • Coating with flour paste and bread crumbs makes them more crispier.
