We always throw the watermelon rind but after this recipe, I am not going to throw it anywhere. Yes!! you heard it right, today we are going to make a simple dessert using watermelon rinds. In this recipe, we are going to take thin layers of watermelon rind, stuff them with a classy sweet filling and serve.



  • Take watermelon rinds,
  • Cut thin slices from the white portion of the rind,
  • Wash them in clean water,
  • Boil some water,
  • Boil slices in water for 10 minutes,
  • Prepare sugar syrup by adding 1 cup water and 1 cup sugar,
  • Dissolve the sugar in it, ensure to not make string in it,
  • Add 2 crushed cardamom, and a pinch of green color,
  • Add the boiled slices in the sugar syrup and cook for 10 minutes on medium flame,
  • After 10 minutes switch off the flame, keep the slices dipped in the syrup and keep it aside,
  • In a pan dry roast 1/2 cup of desiccated coconut till it becomes golden brown,
  • Take it out in a mixing bowl, add 1/2 cup powdered sugar and mix well,
  • Add some chopped raisins, almonds and 1/2 tbsp crushed fennel,
  • Give it a good mix and add 2 tbsp oil,
  • Mash it until it starts binding,
  • Take out the slices from sugar syrup,
  • Place stuffing on one of its end,
  • Roll them and insert a clove to hold it in shape or you can also use a toothpick or wooden sticks,
  • And these are now ready to be served.


  • Sugar syrup should not make a string in it otherwise it will crystalize later.
  • You can make the desiccated coconut by grating the outer black portion, chop the white portion in small pieces, and grind them.
