
Dum Aloo Recipe by Jayati Singhal
Kashmiri Dam aloo is the popular cuisine of Jammu & Kashmir, India. Dum aloo is an Indian Potato curry which has an unlimited number of ways to be cooked. Every Indian state has its own version of making it either it’s a Kashmiri dum aloo, banarsi dum aloo, Punjabi dum aloo, shahi dum aloo, or bengali dum aloo. I am sharing my way of making “Dum aloo” which is quite simple using easily available ingredients.
INGREDIENTS FOR MAKING DUM ALOO:-
- Coriander seeds(2 tbsp)
- Cumin seeds(1 tbsp)
- Cardamom(5 pieces)
- Black cardamom(1 piece)
- Fennel seeds(1 tbsp)
- Cloves(5 pieces)
- Black pepper(5 pieces)
- Gram flour(2 tbsp)
- Oil(as needed)
- Potatoes(6 medium-sized)
- Turmeric powder(1/2 tbsp)
- Red chilli powder(1/2 tbsp)
- Tomatoes(4 medium-sized)
- Salt(as per taste)
- Curd(3/4 cup)
- Water(1.5 cup)
- Coriander leaves(as needed)

METHOD FOR MAKING DUM ALOO:-
- For dum aloo, we first need to prepare a garam masala for which we will dry roast some whole spices,
- Add 2 tbsp coriander seeds, 1 tbsp cumin seeds, 5 pieces of cardamom, 1 piece of black cardamom, 1 tbsp fennel seeds, 5 pieces of cloves, 5 pieces of black peppercorns and dry roast them for 2-3 minutes,
- Transfer the roasted masala in a mixer grinder and grind it to a coarse powder,
- Now, take 2 tbsp of gram flour in a pan and roast it till the color changes and keep aside,
- Heat some oil in a pan and deep fry 6 medium-sized potatoes till they become golden brown,
- After frying the potatoes reduce the oil in the same pan (keep around 2-3 tbsp oil in it),
- Add 1/2 tbsp turmeric powder, 1/2 tbsp red chilli powder and cook them for few seconds,
- Add the tomato puree of about 4 medium-sized tomatoes and cook them until the oil separates from the corners,
- Add salt as per your taste,
- Add curd about 3/4 cup and cook again for 3-4 minutes,
- When the gravy is well cooked add the prepared garam masala and gram flour that we roasted earlier,
- Add water to adjust the consistency and let it boil,
- Add the fried potatoes and cook together for 4-5 minutes on low flame,
- Garnish with some coriander leaves and your “Dam Aloo” is ready to be served.
NOTES:-
- You can use baby potatoes or chop the normal potatoes in large sizes.
- When you will add the gram flour to the gravy it will instantly become thick, and you have to add water to adjust the consistency.
